Farm Dining Zen
We offer dishes that will please our mind and body, using 100% whole grains. We have a farm that uses environmentally regenerative, cyclical, natural farming methods that do not use pesticides, chemical fertilizers, herbicides, or other chemicals.
Our restaurant is a “Farm to Table” restaurant where you can enjoy creative dishes arranged with local food and traditional Shinshu cuisine.
Chef
Junji Oda [Owner Chef]
He started out in Japanese cuisine at the age of 25, later gaining experience in various genres such as Chinese, ethnic, and Western cuisine before obtaining his chef’s license. In 2009, he started a restaurant specializing in whole grain cuisine, and in 2017, he opened “Farm Dining Zen”, aiming to provide health-conscious cuisine that incorporates the concept of a whole food meal. He has been a licensed chef in Japan for over 20 years and is presently the president of the Omachi Chefs Association.
Mie Oda [Owner]
As a nutrition education advisor and Nagano Prefecture Governor’s certified Rural Life Meister, she is involved in activities that connect food and agriculture. She is the representative of a citizens’ group that promotes environmentally friendly organic agriculture, and her video introducing her efforts won the Sustainer Award 2023 from the Ministry of Agriculture, Forestry and Fisheries.
* A chef is a national qualification in Japan, and only those who have passed the prefectural chef examination based on the Chef Law and are registered on the prefectural register of chefs can call themselves a chef.

Chef
Masayuki Matsushima [Owner Chef]
He trained himself at a long-established French restaurant in Matsumoto, a restaurant in Paris (France), and a hotel in Hakuba to obtain his chef’s license. And he has served as a head chef at hotels in Suwa, Karuizawa, Iga in Mie Prefecture, Hakuba, and Yonezawa in Yamagata Prefecture.
His dishes are not only full of great taste and texture, but unexpected combinations of ingredients surprise his guests. He is a licensed chef in Japan.
